SAKE SWEETNESS

DESCRIPTION

Arresting, juicy aroma of melon, pear, cotton candy. Huge impact of flavour, hints of pineapple and peaches, well-balanced with just enough sweetness and a light beautiful texture, finishes complex and dry. Green apple acidity and good umami.

SOMMELIER'S NOTES

As Toko Brewery becomes a all-junmai brewery, this is the spiritual successor to the trophy winning Toko Daiginjo Yamadanishiki. Rich flavour creates a surprising impact on your first sip.

Sake is dry with a full body and long finish

Clear. Slight yellowish tint. Nose: Nutmeg, banana, custard, yoghurt, and some slight vanilla. Palate: Nutmeg, banana, custard, yoghurt, some slight vanilla, and roasted nuts. Body: Medium (+). Alcohol: Medium. Umami: Medium (-). Acidity: Medium. Personal opinion: Clear sake with some slight yellowish tint. High viscosity. Ginjo-ka is definitely present, with aroma of medium intensity and complexity. Sake is dry with a full body and long finish.
