Launched in 2016, Wakaze is a French Sake Brewery headed by 2 Japanese, Takuma and Shoya. Trained in Japan, they set up their second brewery located in the suburb of Paris to share Wakaze with the world. Takuma and Shoya lead a team obsessed with quality. After struggling to find good sake outside of Japan, the pair founded their brewery using centuries-old knowledge, French ingredients, and innovative techniques. Wakaze is a product of many things: Intuition and precision. Experimentation and mastery. History and heart.

Powerful and rich aromas of melon and pear. Big and juicy on the palate with a velvety texture and soft umami. Tatsu no Otoshigo offers the DNA of Juyondai, aromatic and balanced. Clean aromas of fruit, gentle flavors, and mineral finish. It is a proprietary variety of brewing rice developed by the brewery,
The Sake rice used is a cross strain between Yamashu No.4 "山酒4号" and Miyamanishiki "美山錦“.
The is probably the least sweet Juyondai Sake. It has a rich mouthfeel with good structure and minerality

This special sake rice is combined with Shizuku (drip sake) which is made from only drops by gravity from moromi (fermentation mush) in a hanged filter bag.
Packed in a beautiful wooden box, this Shizuku sake has an elegant fragrance and feminine, delicate taste. Fruity and floral with notes of peach, peach and lychee. Excellent balance between sweetness and acidity. It will leave you a clear, pleasant afterglow like melting-snow water with the silky, smooth superior texture.
