We finally have it - the highly touted sake brewery from Ishikawa - Tengumai! 👺

Shata Shuzo was founded in 1823 and is located close to Kanazawa and the Sea of Japan. The primary brand name is “Tengumai” with means Dancing Tengu. Tengu are creatures of Folklore in Japan. The idea is that after drinking their sake, even the Tengu would want to dance.

While using the spring water from Mount Haku and the high-quality sake rice nurtured in Kaga plain, Shata Shuzo brews several varieties of sake by the Yamahai method, a method which uses a traditional yeast starter. This method is one of the difficult methods in sake brewing. In the 1960’s, a Yamahai method that is original to Tengumai was developed through the brave challenges by the 7th generation, Toshiro Shata and the Noto-Toji (Noto Region’s Master brewer), Saburo Naka. They continued their research and eventually Saburo Naka was awarded the title of Contemporary Master Craftsman by the Japanese government.

  1. Tengumai Junmai Daiginjo 50 (U.P. $85): Aged for a very short time compared to the rest of the Tengumai Sake line, Tengumai 50 Junmai Daiginjo comes out as full bodied and refreshing. Excellent bottle for the money and one of the best buys in this price range. It is a superb bottle with sushi and seafood with nice acidity and sweetness that mirrors that of sushi rice or something like a Kumamoto Oyster.  Semi-dry and excellent chilled or at room temperature.           

  2. Tengumai Junmai Yamahai (U.P. $70): The seemingly effortless harmony so characteristic of Yamahai sake is ever present in Tengumai's masterful brew. Gorgeous pale straw pour, with a funky mushroom nose to match the acidic, dry and earthy first impression. While savouring the buttery mouthfeel, one may even notice hints of walnut bread and honeyed mead, so keep your eyes peeled. When chilled, the more floral notes come into play. An absolute pleasure to drink at any and all temperatures.

A favourite of the Imperial Family, only made available to the public in 1970. This was used for the coronation of 4 Emperors. Souhana is one of the most versatile sake, fresh crisp and gentle when chilled, and deep, matured and settled flavours with a velvety texture when warmed.

This sake displays a special rich aroma and well-balanced body created by well-harmonized five flavors of sweetness, acidity, dryness, bitterness and astringency. Its been served to the imperial family for more than 100 years.

十四代 本丸 秘伝玉返し

Honmaru means "the original one". Refreshing and sweet flavours, with a rich and velvety mouthfeel, it has an off-dry finish. This tokubetsu honjozo is polished down to 55%, and the jozo alcohol added to it is made in-house.

This is probably the Signature Juyondai Sake. This sake has great mouthfeel and texture. With loads of umami, this goes very easily with most food. Good pairing with Raw Oysters and Sashimi.
