Made with only "Miyamanishiki" brewing rice grown in Nagano Prefecture, ground down to 39% of its original size. This Junmai Daiginjo brewed with high quality spring water from the Minami Alps and yeast from the same prefecture. The moromi is fermented at low temperatures over a long period of time, using the labor intensive traditional Fune method, a rarity in modern sake production. The fune method consists of carefully lining up sake-making bags in sake casks and slowly and gently squeezing out the liquid, and it produces a sake with a pure taste free of off flavors.

Made from the highest quality local sake rice. Fresh ginjo-ka floral aromas of jasmine, white peach, white grape and lychee aromas. Smooth texture, very well integrated with a mouth-watering finish.

It may sound a little odd to pair a Western delicacy with a centuries-old Asian beverage like sake, but it’s not as wild of a combination as you’d think. Becoming more popular in recent years with selections gaining breadth and range, sake has become the go-to alternative pairing for caviar in many restaurants!

Sake, especially when served cold, serves to enhance the briny goodness of caviar and other fish roe delicacies, while taking away some of the fishy flavour that not everyone may be a fan of. The saltiness of the caviar also deactivates the acidity of the sake, making it sweeter and fruitier on the palate.

With that in mind, The Art of Sake has collaborated with our new restaurant partner, Caviar, for a Caviar & Sake Pairing Dinner with the 36 Guardians range! Close out your 2023 with a gastronomic experience that has captivated many seafood and sake lovers, while sampling the entire range of our newest brewery.

In "Koi NISHIKIGOI", the grade and rice is kept a secret – this is to allow one's sense of smell and taste to be surprised, appreciating its flavour and aroma without sight and knowledge of it.

Good intensity and umami. Lactic acidity, refreshing with slight heat on the finish. Nice tropical fruits and rice aromas. Well balanced with umami and sweetness. It would be good to try it warm.

The beauty within is equally matched by the beauty without as the bottle that houses Nishikigoi Saké is artfully crafted by Yamaharu Glass Co. The distinctive red-on-white pattern that mimics the Kohaku variety of Koi has been the recipient of numerous design awards, making each unique bottle a collector’s item
