"On a night like this..." limited edition series 1/5. Brewed using the rare sake rice "Kinmonishiki". 7 days after pressing this sake, it was heated and immediately chilled. It then went through aging at low temperature for 1-2 years, resulting in a mild and pleasant mouthfeel. Uses Nagano M310 Yeast.
Distinctive aroma with complex, savoury flavours. Well-aged and unique, it shows a hint of sweetness with a good balance of bitterness and tartness. Part of complexity is due to aging at low temperature for more than 1 year.
Rich and full bodied, it goes well with grilled fish, sweet and sour pork and dishes that have a sour taste.
