DESCRIPTION
Aged 10 years in Japan's largest underground gold mine, the Sado Kinzan. Due to the cold, most of the fresh fruit aromas have settled into a deep & complex brew. It has also taken on an amber hue. Settled & calming notes of mineral, fragrant spice and a very long finish.
SOMMELIER'S NOTES
I was lucky enough to try this sake in the actual Kinzan Gold Mine. It is stored a 10-15mins trek down the mine tunnels. The yearly temperature of environment is stable at about 10 to 11 degrees Celsius, and the environment is completely shaded, so it is ideal for aging sake.
