DESCRIPTION

Brewed in Niigata, Japan, Naeba Brewery is one of the oldest family owned breweries. Using pure snowmelt water and highly milled sake rice, this sake is dry, rich, balanced and crisp. The sake bottle is made to attract attention.

SOMMELIER'S NOTES

Very clean, light and dry. It can be drunk on its own in a wine glass, or using to make cocktails. It is a modern take on a age-old classic.

This sake by Four Fox Sake is a brew with a radical bottle design hailing from Niigata. A revolutionary attempt to modernize sake as a suave choice of drink in nightclubs and swanky bars, this 50% polished Gohyakumangoku Junmai Daiginjo has some of the most swag marketing, and the posts that come along with it are literally dripping with @hypebeast. ⠀ ⠀ The nose features melon rind, with hints of peppery spice, tart green apples and sweet lychee amongst rice husk and straw notes.⠀ ⠀ A subtle honeydew coats the tongue with a soft, steamed rice flavour. Overall, a round and sweet character which is lovely, umami-filled, but short lived.⠀ ⠀ A surge of crisp, and an electrifying dryness rushes over the entire profile quickly, urging you towards the finish, which is of medium length with a gradually fading sweetness. ⠀ ⠀ Overall, this sake has good balance. It is easy to drink and is perfect for sake beginners, which the world needs more of. I find this sake simple to drink as an absent-minded tipple, or four. ⠀ ⠀ This sake was built with a straightforward character for cocktail making, or Foxtails, as aptly named. I'm no bartender, but I gave my fair attempt with Four Fox Sake, fresh pressed muskmelon juice, and a dash of bitter lemon soda, which was fun and absolutely delectable (I'll put a disclaimer on my personal bias). But, I totally see the point and appeal of Four Fox Sake, Foxtails, and the whole experience indeed, and I'd love to see more of it real soon. ⠀
