Senkin Shuzo, Tochigi's oldest brewery since 1806, combines tradition with modern innovation led by two brothers. Using the Bordeaux-style Assemblage method, they craft balanced sake that highlights the unique characteristics of rice varietals like Yamadanishiki, Kamenoo, and Omachi.
The three core sake rice varietals of Senkin's local growers - Yamada Nishiki (polished to 7%), Kame no O (polished to 35%) and Omachi (polished to 40%) - are slowly, painstakingly and expertly brewed using their own local yeast and groundwater, drawing forth the most special qualities each rice.
The Fukurotsuri process ensures the purest extraction, resulting in a sake with elegant aromas of grape, pear, and white flower, and a silky, refined texture. This premium label, winner of the 2018 SAKE COMPETITION, offers a perfect balance of delicacy and richness.
