SAKE SWEETNESS

DESCRIPTION 

This is a premium and limited edition sake made by the old-fashioned brewing method and low-temperature extraction of mash. Like pure white silk, it has a very soft and smooth taste with glossy finish. 

"Jazz and freedom go hand in hand." is the tagline for this sake. 

W by Watanabe Shuzouten is Hourai's second label. W has 3 meanings; Watanabe, World & Warai (Laughter).  Japanese Comedy TV is played to the fermentation tanks so that the sake yeast is happy, the brewery staff are happy, and the customers are happy. Although written as a Junmai-shu, this sake qualifies as a Junmai Daiginjo as the rice used to make this sake is polished to 50%.

SOMMELIER'S NOTES

A brand new rice polishing machine was bought just to brew this sake. The Underground also uses White Night koji and top grade AAA yamadanishiki rice. Unlike its "hardcore" appearance, this sake has a "fairy-like" and "princess" vibes, where the taste floats around airily on your palate before vanishing in thin air. Very "Kirei" finish indeed.

Find the right song on your tongue

Like shallow water running across flat stones, but no minerals on the tongue. Like blades of grass but no aromas like that. Vanishing on the tongue, listening to Alice Coltrane’s "Andromeda’s Suffering". Thanks for an awesome On-Nomi #36 !
