This sake is nobly named after the Old name of Kyoto, "Heian-Kyo". It is also the ultra-refined version of The Willow!

Tsuki no katsura was founded in 1675 by the Masuda family in Fushimi, one of the eleven wards of the city of Kyoto, Kyoto Prefecture. Over the centuries, their sakes have been praised by classical Japanese writers and poets, earning them the nickname “the literary sake”. Tokubee Masuda is the 14th generation owner, and an ardent proponent of tradition and innovation.

Light and silky, with a delicate tropical fruit nose, good complexity. Lots of floral aromas with hints of morning dew. It uses Iwai rice type which is a high quality Ginjo rice with a very large Shinpaku/starch center. Hence, less polishing is needed to achieve the same desired results.
