Appearance: Clear, pale, lemon-green appearance with high viscosity observed. Nose: Sake has clean nose, with medium (+) intensity in aroma, in notes of wood shavings, lactic/dairy (fresh cream, yoghurt), Ginjo (pear, apple), spices (white pepper), and fruity/floral (pomelo). Palate: Sake is off-dry, with medium (-) umami and acidity, low level of perceived alcohol, light body with simple texture and medium (+) flavour intensity in notes of wood shavings, lactic/dairy (fresh cream, yoghurt), Ginjo (pear, apple), spices (white pepper), and fruity/floral (pomelo). Sake has a medium finish length and pepper-ish-pomelo aftertaste. Conclusion: Sake is light with complex flavours. For a Kijoshu, the dryness and aftertaste is somewhat unexpected (I would have expected at least medium sweet). It’s very interesting that the 1st and 2nd glasses are drastically different.
It has no right to be this good!
Superb! Reminiscent of Juyondai‘s signature style i kid you not. Save for the rich intensity and that last bit of refinement. At this price point, it’s out of this world. My new favorite affordable sake.
