DESCRIPTION

Shoka is a noble, rich-tasting kimoto junmai daiginjo obtained by way of natural drip for enhanced purity. The refined and graceful aroma and seductive umami of Shoka harmonize at a higher level with the extra-sophisticated, invigoratingly powerful mouth-feel and the enchanting, satisfying aftertaste.

Shoka presents the true harmony between power and gracefulness. The name “Shoka” means “Ode,” in ancient Greece a song of praise to celebrate the triumph of heroes.

SOMMELIER'S NOTES

Serve chilled at 10-12 C. Goes with dishes with a soft umami, such as boiled king crab or fish with white meat, dishes with egg, creamy dishes.

Daishichi only uses the Kimoto method to brew sake. The method makes use of the struggle for survival of natural microbes, a complex process for which high skill is necessary and which takes three times longer than normal.  The brewery is also a pioneer in flat rice polishing. Normal rice polishing usually wastes starch on the long axis, and the a flat rice polishing ratio of 51% is equal to a normal rice polish of 34%
