Just like a Rockhopper Penguin, this sake is a shiboritate brewed during the coldest season of the winter in Saijo. It was pressed and bottled right away without adding additional water, making it a Genshu. We aged it from February to mellow out the wildness of a Shiboritate.

This is a seasonal sake. It can be served neat or on the rocks! You can also enjoy it with a bit of sparkling water.

Winter sake! Highly recommend

Love the unami! Winter sake always amazed me. Not all winter sake give a balance between the strengths, sweetness and unami. This bottle carries it well
