Description
Dewazakura Tokubetsu Junmai 'Honu' is a very special (Tokubetsu) Junmai Sake is produced from 100% Yamagata’s special sake rice Haenuki, and Yamagata’s local Sake yeast is used. It is quite rare as it has gone through malolactic fermentation, which was induced to give softer lactic acidity.
It is very gentle, and the acidity is fresh, with a juicy mouthfeel showing orange peel, lemon and yoghurt, and the finish is crisp and clean. The alcohol is also relatively low for Sake, which brings a nice ‘lightness’.
‘Honu’ is a guardian deity of green sea turtle in Hawaiian, and culturally it is a symbol of happiness and prosperity and brings good fortune.
