A Journey to the Mystery of Fermentation - (Physical) Sake On-nomi #50

A Journey to the Mystery of Fermentation - (Physical) Sake On-nomi #50
- Description
- Sake Selection
We know the 4 main ingredients for sake making - rice, water, koji and yeast. While yeast is necessary for the fermentation of every alcoholic drink, sake yeast is a bit different from the yeast that ferments wine and beer. Why bother knowing about yeast? Because the strain of yeast that a brewer selects - as well as the way the fermentation is carried out - has a direct affect on the sake's aroma and flavour.
This sake tasting, we'll be tasting 8 sake, each made with a different yeast. 6 of them are Junmai sake made from Senjo Craft Lab, from yeast #1 to #6. The other 2, Four Fox Junmai Daiginjo and Keigetsu Junmai Daiginjo CEL24, are made from yeast #9 and well, the Kochi-developed modern yeast CEL24.
For $68, you will have exclusive access to join a physical 1 hour sake appreciation session and sample 8 sakes on Wednesday, 15th March 2023, 7:30pm.
