1. Imanishiki Infini8 Red (U.P. $88)

The Imanishiki INFINI8 series is a new brand born from an endless pursuit of crafting even more delicious sake, challenging convention by creating a completely new expression each year—towards infinity. The first release, INFINI8 “Red,” commemorates the brewery president’s 60th birthday (還暦, Kanreki), a milestone symbolizing rebirth and renewal, and takes its name from the traditional red attire worn on this occasion. 

This sake boldly combines Shinkou-sake Rice #557 (Yumeminishiki)—a newly developed rice from Nagano Prefecture not yet officially announced—with Kyokai No. 1401 yeast, resulting in a light-bodied sake with a distinctive, refined acidity that harmonizes beautifully with a soft aroma and a delicate, floral-inspired finish.

2. Senjo Junmai Ginjo Salamander (U.P. $59)

"On a night like this..." limited edition series 1/5. Brewed using the rare sake rice "Kinmonishiki". 7 days after pressing this sake, it was heated and immediately chilled. It then went through aging at low temperature for 1-2 years, resulting in a mild and pleasant mouthfeel. Uses Nagano M310 Yeast.
