A favourite of the Imperial Family, only made available to the public in 1970. This was used for the coronation of 4 Emperors. Souhana is one of the most versatile sake, fresh crisp and gentle when chilled, and deep, matured and settled flavours with a velvety texture when warmed.

This sake displays a special rich aroma and well-balanced body created by well-harmonized five flavors of sweetness, acidity, dryness, bitterness and astringency. Its been served to the imperial family for more than 100 years.

As the sake gets warmer, the complexity becomes more noticeable

Clear, water-white, colourless appearance with high viscosity. Nose: Sake has a clean, medium intensity of aromas in terms of cereal/grain (Rice flour, steamed rice), fruity/floral (whitel flowers, Lilac, mandarin orange), nuts/beans (roasted nuts, caramelised nuts), and sweetness (caramel). Palate: Sake is medium dry with medium (+) acidity and high umami, medium alcohol, and medium (+) body with a velvety texture. It has medium flavour intensity with flavours of cereal/grain (Rice flour, steamed rice), fruity/floral (whitel flowers, Lilac, mandarin orange), nuts/beans (roasted nuts, caramelised nuts), and sweetness (caramel). The sake ends off with a medium finish. Personal opinion: The junmai notes are quite dominant for this sake, especially when the sake is around hana-hie. At this temperature, the notes are rather restraint (nose and palate). As the sake gets warmer, the complexity becomes more noticeable as fruity/floral, nuts, and sweetness get more apparent. And yup, I’ll take this to go with Edo-mae sushi.
