This polished sake uses the shizuku drip extraction method & Tobindori bottling method. Fresh, juicy aromas of winter fruit laced with hints of white pepper. Elegant and deep on the palate, with a silky texture and a gentle bitterness to create structure and form.

A great alternative to Dassai 23. Fantastic pedigree, at a surprisingly affordable price point for a Junmai Daiginjo.

The bottles are now limited edition and numbered as they only produce 1000 bottles a year.

Sake is balanced, flavourful and refreshing with the acidity

Appearance: Clear, water-white, colourless appearance with high viscosity and some bubblings observed. Nose: Sake has clean nose, with medium intensity in aroma, in notes of Ginjo (apple, pear, melon), nuts/beans (caramelised nuts, chickpeas), and others (toffee). Palate: Sake is off-dry, with medium (+) umami and acidity, medium level of perceived alcohol, medium body with silky and velvety texture and pronounced flavour intensity in notes of Ginjo (apple, pear, melon), nuts/beans (caramelised nuts, chickpeas), and others (toffee). Sake has a long finished that started off with the sweet taste of caramelised nuts before fading into slight bitter notes which is reminiscent of chickpeas. Conclusion: Sake is balanced, flavourful and refreshing with the acidity and bubbling mouth-feel.
