Narutotai "MIZU-TO-KOME" (水ト米) means water & rice, which represents sake brewery's philosophy to deeply appreciate and extract original tastes of water & rice by Junmai sake making.
This is a Junmai sake that is highly recommended for beginners. Characterized by a smooth, fruity, refreshing taste, it can be matched with many cuisines as if you were drinking a white wine.
No yeast is added and fermentation is carried out only with the natural lactic acid, so it has low acidity and the result is a gentle junmai sake. By adjusting the alcohol percentage during the refining process, hard edges have been taken off giving it a light taste.
Its scent is frank and pure, reminiscent of white flowers in the spring. It tastes very fresh and pure. Plenty of minerality in its aftertaste. Pairs well with roquefort cheese with walnuts, crab with mango or cranberries.
