Sparkling is a popular sake from Nito, crafted using the traditional in-bottle secondary fermentation method to create fine and persistent bubbles, similar to the production of Champagne. This results in a soft and comfortable mouthfeel, unlike the carbonation achieved by injecting carbon dioxide. Continuing the tradition of previous releases, this year's version is also a Nama (Unpasteurized) and Usu-Nigori (Slightly cloudy) sake, meaning it has a layer of sakekasu (Rice sediment) at the bottom of the bottle. Upon opening, the bubbles will disperse this sediment throughout the sake!
The aroma offers fruit notes, while the palate is soft, presenting both rice fragrance and umami, complemented by a refreshing and lively effervescence. It's an ideal choice for the increasingly warm weather! This sparkling sake pairs well with rich and flavorful dishes such as barbecue, hot pot, and fried foods!
** For those who have enjoyed previous versions, you may notice that this year's label features one of the rabbits replaced by a monkey holding a bomb. Exercise extreme caution when opening Nito Sparkling, as the powerful carbonation can cause the cap to explode off like that bomb, potentially hitting the ceiling!
