Description
The Infini series is the brewery’s yearly challenge of creating a new sake. “Infini” is French for infinity, and the name plays on the sideways “8” (∞) as well as the Japanese character 八, whose outward-spreading strokes suggest eternity and prosperity.
This edition is brewed with Nagano Prefecture’s Yumeminishiki rice (Shinkou-sake No. 557) and Ka8 yeast from the experimental Infini8 series. It has an elegant ginjo aroma and a full-bodied yet smooth palate, with rich, fruity, sweet and umami-forward flavors. It’s best enjoyed on its own or with light appetizers.
