March's Sake Discovery Box features one of our most underrated brewery - Kawatsuru!

If you've tried the Junmai Daiginjo Wisdom and Junmai Daiginjo Beppin, you know the brewery produces quality sake - and these 2 sake featured in the bundle were specially brought back, after their positive reception at last year's Sake Matsuri! 

Founded in 1892, the sake name Kawatsuru is named from river crane, from the time their founder saw a beautiful crane flutter down to the pristine waters of the Saita River This river is also knows as the Takarada River, as its water is seen as bringing treasures to the surrounding rice fields. From the spring water of this river, we brew sake with a powerful, refreshing taste.

Kawatsuru's aim is to be a true sake brewing group that protects the spirit of sake brewing, which has been passed down since the first generation. Kawatsuru not only excels in sake making but also rice cultivating as well. Kawazuru's sake has a taste that spreads the flavour in a pleasant way, as it is packed with the full flavour of rice. Most of the rice used is locally grown rice such as Sanuki Yoimai and Oidemai.

1. Kawatsuru Junmai Daiginjo Sanuki Yoimai (U.P. $88): Made with Kawaga's native Sanuki Yoimai rice. Elegant and fragrant, pleasant ginjo-ka through and through. Pleasant acidity and a nice aftertaste. A fine Junmai Daiginjo that exceptionally versatile in serving temperature and food pairing.
   
   
2. Kawatsuru Junmai Ginjo Tanono (U.P. $68): Made with 100% Yamadanishiki cultivated in Tano-no rice field, located deep in the mountains of Kanonji City, Kagawa Prefecture. The rice field is located at an altitude of approximately 230 meters, making it a perfect location for cultivation as it is a gently sloping terraced rice field with varying temperatures. Made in small batches and long-term low-temperature fermentation. The elegant aroma brings out the delicate flavour of Yamadanishiki.
