August's Sake Discovery Box is both experimental and upholding tradition. The Imanishiki Junmai (left) was left to rest over the winter at the Zero Magnetic Field in Nagano Prefecture to see if it affects the sake's flavour, while the Eikun (right) uses the Kyoto-bred rice Iwai, known for its high suitability for sake production. Its large-grained and soft opaque "white heart" was a crowd favourite but it has a couple of issues that limit its production and availability.

1. Eikun Junmai Daiginjo Kotosennen (U.P. $99): Made from Kyoto's special brewing rice “Iwai”. Aromas of sakura blossoms, fresh, bright acidity with flavours of cherry and candy floss. Slight hint of white pepper and nutmeg on the finish.
   
   
2. Imanishiki Junmai Zero Magnetic Field (U.P. $68): An experimental sake the brewery left to rest over the winter at the Zero Magnetic Field in Nagano Prefecture. An invigorating while not overpowering aroma, when drinking swells throughout the mouth and is characterised by it's robust taste and acidity. Does the Zero Magnetic Field really has any effect on flavours? You be the judge!
