This sake is made from the King of Sakamai, Yamadanishiki, It has a a mild fruity nose (for a juyondai), and a sweet rice flavour. Polished to 50%, it can technically be called a Daiginjo, but the brewery decided to just call it a Ginjo Sake.

A milder, less sweet style of Juyondai, it has good balance.

Sake is balanced and flavourful

Appearance: Clear, pale, lemon-green appearance with high viscosity. Nose: Sake has clean nose, with medium (+) intensity in aroma, in notes of Lactic/Dairy (Fresh cream, yoghurt), Ginjo (apple, pear, banana), fruity (passion fruit, mandarin orange), and others (vanilla)。 Palate: Sake is medium dry, with medium (+) umami and acidity, medium level of perceived alcohol, medium body with velvety texture and pronounced flavour intensity in notes of Lactic/Dairy (Fresh cream, yoghurt), Ginjo (apple, pear, banana), fruity (passion fruit, mandarin orange), and others (vanilla). Sake has a slight bitter (notes of mandarin orange) and crisp finish. Conclusion: Sake is balanced and flavourful, with some depth and complexity as compared to the Daiginjo and the other lineups
