Ricey aromas, impactful, rich and intense flavours.

Nadagiku Junmai Daiginjo Judo, a special cuvée called "Judo" that the Kawaishi family produces as a tribute to their illustrious ancestor Mikinosuke Kawaishi, an eminent judoka who largely contributed to the development of Judo around the world. Made with Hyogo Yumenishiki rice polished to 50%, this sake won a Gold Medal at the 2020 Kuramaster Sake Competition (A French competition comprises of French judges on Japanese Sake) Ricey aromas, impactful, rich and intense flavours. Best paired with oily and rice tasting food to complement the flavours.

Beautiful depth and a lot of freshness!

Rich fruity aroma with rice character on the nosing. Elegant depth of sweetness and a lot of freshness on the palate. Mild dryness and pleasant finishing. This sake was a fruity character with a bold structure.

I really like the tropical notes when first open the bottle

Appearance: Pale, lemon-green appearance with viscosity observed. I thought I saw something suspended in the glass every time I had a pour, not too sure if it’s because I kept the bottle for a tad too long (but it still taste as great). Nose: Sake has clean nose, medium (+) intensity with notes of Ginjo (pineapple, pear, apple), fruity/floral (pear skin, apple skin), and lactic/dairy (yoghurt, cream). Palate: Sake is medium-dry, with medium (+) umami and acidity, medium level of perceived alcohol, medium (+) body with velvety and creamy texture, and pronoun flavour intensity with notes of Ginjo (pineapple, pear, apple), fruity/floral (pear skin, apple skin), and lactic/dairy (yoghurt, cream). Sake has a medium (+) finish with notes of pineapple, pear skin and lactic notes. Remarks: I really like the tropical notes when first open the bottle for the first pour on the first day, especially that of pineapple and pear. Somehow, these characteristics somewhat diminished a little towards the second and third day, where it become somewhat more complex with depth.
