Sake Selection
1) Gozenshu Junmai 1859 Nama
Rice: Omachi
Bold fruit flavours, pear, lychees, raspberries, apricots, and a hint of jackfruit. It starts off easy on the palate and then turns dry, rich and dense as the lactic acid kicks in. It also has hints of its Omachi roots, with white pepper and other herbal notes on the finish.
Suggested food pairing: Kimchi Nabe, korean pork belly (samgyeopsal), Salami, Oyster Omelette.
2) Dewazakura Junmai Daiginjo Aiyama
Rice: Aiyama
Aiyama is known as a thoroughbred sake rice. Its lineage traces back to Yamadanishiki and Omachi rice, and it shows the characteristics of these 2 famous sake rice.
Suggested food pairing: Kung Pao chicken, Yakitori, Tempura, Cream Cheese, Seafood Carbonara.
3) Echizen Misaki Junmai Daiginjo Sakahomare
Rice: Sakahomare
This Junmai Daiginjo is made from a brand new Fukui Sake Rice, Sakahomare, which was development to brew high end sake. It showcases an elegant aroma, with a silky mouthfeel with ripe fruit and mellow flavours. It will easily enhance any meal.
