This sake is made from Yukimegami, a rice type developed and used exclusively in Yamagata Prefecture. It is only used to make daiginjo sakes. It counts Yamadanishiki as its grandparent rice varietal, and it has a larger rice core (Shinpaku) and lower protein content.
A milder, less sweet style of Juyondai, It has good structure and balance.
