Made with 100% Koshi Kagura from contractfarming in Myoko City and brewed with Kiminoi's own lactic acid bacteria brewing method (Yamahai method), this junmai daiginjo is characterised by sharp acidity with a low alcohol content of13%.

Koshi Kagura is Niigata Prefecture's unique sake brewing rice, which was created by crossbreeding Yamadanishiki, which is suitable for sake brewing, and Hokuriku No. 174.
