Established in 1903, the founder was a close friend of Yataro Iwasaki, the founder of Mitsubishi, also from Aki city. Akitora is made with the pure subsoil flow of Akano River that is famous in the region for its delicious sweetfish. The water has a mellow flavor that offers a more rounded, soft approached to dry sake. The brewery's motto is "Harmony with food." They want to create sake that can be enjoyed on its own, and can also offer the true sake flavor when drunk with food.
Extremely clear and delicate with a fragrance reminiscent of bananas and apples. The light bodied sake is very easy to drink with a soft, smooth texture in the mouth and the finish vanishes leaving the impression of a delicate water. A sake that soothes and nourishes the mind.
Delicate seafood such as shrimp, squid and shellfish, Salt-grilled or grilled lightly-dried fish with white flesh, and Soba miso.
