This sake is unfiltered, giving it more breadth of taste compared to other Juyondai. It still retained its silky texture, and its fruity and floral aroma. Polished to 55%, this sake still maintains a good amount of umami.

The Sake rice used is a cross strain between Yamashu No.4 "山酒4号" and Miyamanishiki "美山錦“.

One of the most affordable Juyondai, it is a good entry into the world of ultra premium sake.

Sake is rich, refreshing with the acidity and bubbling mouth-feel

Appearance: Clear, pale, lemon-green appearance with high viscosity and some bubblings observed. Nose: Sake has clean nose, with medium (-) intensity in aroma, in notes of Lactic/Dairy (Fresh cream, milk, yoghurt), ans Ginjo (apple, banana, pineapple). Palate: Sake is medium dry, with high umami and acidity, medium level of perceived alcohol, medium (+) body with velvety texture and medium (+) flavour intensity in notes of Lactic/Dairy (Fresh cream, milk, yoghurt), ans Ginjo (apple, banana, pineapple). Sake has a medium (+) finish length. Conclusion: Sake is rich, refreshing with the acidity and bubbling mouth-feel, and has a very strong fruity impression instead of starchy notes for a Junmai-shu.
