DESCRIPTION
This is the final work of the "Omachi Trilogy", a limited edition sake for 3 months in a row, made entirely from "Omachi x Bodaimoto".What is the unique interpretation of the grammar of "Kijoshu©" that only Gozenshu can achieve? It is the unique and unique sake called "Bodaimoto x Bodaimoto sake" made from Bodaimoto Junmai-shu and Bodaimoto Junmai-shu. Distinctive outline of the dense and dense character of Bodaimoto, clear and transparent on the palate, we think of it as a modern and sublimated "Yasiori no Sake".
SOMMELIER'S NOTES
Bodaimoto is an age old method pre-dating even the Kimoto method, It was recreated by a group of young brewers trying to reinvent the ancient styles of sake making. Gozenshu has promised to use only Omachi rice to brew sake by 2022.
